Cho phần thịt băm đã ướp nhồi vào chính giữ khoanh bí, ém chặt thịt để ko bị rớt ra khi nấu. Cho 10gr hành tím vào nồi phi thơm sau đó xếp từng khoanh bí vào nồi và cho 1 lít nước lọc cho ngập mặt bí. Nấu sôi nồi bí trong 15. Sau đó tắt bếp.
Gọt vỏ bí, cắt khoanh và gọt bỏ phần ruột bí. Thịt băm cho vào âu cùng vớ 20gr ngò rí, 20gr hành lá, 1 muỗng canh nước mắm, 1 muỗng cafe hạt nêm, 1/2 muỗng cafe bột ngọt, 1/2 muỗng cafe tiêu. Trộn đều ướp 15 phút.
