Cải thảo lặt lá, rửa sạch, để ráo, cắt khúc vừa ăn. Nấm hương ngâm nước cho nở rồi rửa sạch, vắt ráo nước và cắt lát mỏng. Tỏi xắt lát, ớt khô xắt nhỏ. Đun nóng chào với dầu ăn, cho ớt, tỏi vào phi thơm 30 giây. Sau đó cho ruốc và nấm hương vào xào 1 phút rồi thêm cải thảo vào xào 2 phút cho chín mềm. Nên 1/2 muỗng giấm, 1/4 muỗng đường, 1/4 muỗng muối, trộn đều lên 1 - 2 phút nữa là tắt bếp. Gắp cải xào nấm ra dĩa và ăn cùng cơm nóng.
